  • 4 cups roasted Hatch green chiles (fresh or canned)
  • 4 cloves garlic, minced
  • 1 medium sweet onion, chopped
  • ½ cup fresh cilantro, chopped (plus more for garnish)
  • 2 cups low-sodium chicken broth
  • Juice of 2 limes
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Gather all ingredients for easy access while cooking.
  2. In a large pot over medium heat, add olive oil and sauté the chopped onion until translucent. Add minced garlic and sauté for an additional minute.
