  • 1 can (15 oz) black beans, rinsed
  • 1 cup frozen corn
  • 4 green onions, diced
  • 1 cup shredded Monterey Jack cheese
  • 12 egg roll wrappers
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • Vegetable oil for frying

Instructions

  1. Cook chicken in a skillet over medium heat until no longer pink. Shred chicken while warm.
  2. In a bowl, combine shredded chicken, black beans, corn, green onions, cheese, cumin, and chili powder; mix well.
  3. Place an egg roll wrapper on a clean surface and spoon about 2 tablespoons of the filling into the center. Fold and roll tightly to seal.
