Ingredients

  • 2 medium zucchinis
  • 2 cups fresh spinach, chopped
  • 1 cup button mushrooms, diced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice each zucchini in half lengthwise and scoop out the insides.
  3. In a skillet, heat olive oil over medium heat. Add mushrooms and sauté for about 5 minutes until softened. Stir in fresh spinach until wilted.
  4. Mix in garlic powder, salt, pepper, and half of the shredded cheese into the filling.
  5. Generously spoon the filling into each zucchini half and top with remaining cheese.
  6. Place on a parchment-lined baking sheet and bake for 20-25 minutes or until zucchinis are tender and cheese is bubbly.
