  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 medium sweet onion, chopped
  • 1 cup low-sodium chicken broth
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 2 cups mixed vegetables (carrots and bell peppers)
  • 2 tbsp honey or maple syrup
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp freshly squeezed lemon juice

Instructions

  1. 1. Season chicken breasts with salt and pepper and place them in the slow cooker.
  2. 2. Scatter garlic and onion over the chicken. Add carrots and bell peppers.
  3. 3. In a bowl, mix honey or maple syrup, soy sauce, lemon juice, paprika, and cumin until well combined. Pour over the chicken and vegetables.
  4. 4. Cover and cook on low for 6-8 hours or high for 3-4 hours until the internal temperature reaches 165°F.
  5. 5. Shred the chicken in the pot using two forks and stir to combine before serving.
