- 4 cloves fresh garlic, minced
- 1 medium sweet onion, chopped
- 1 cup low-sodium chicken broth
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 2 cups mixed vegetables (carrots and bell peppers)
- 2 tbsp honey or maple syrup
- 2 tbsp low-sodium soy sauce
- 2 tbsp freshly squeezed lemon juice
Instructions
- 1. Season chicken breasts with salt and pepper and place them in the slow cooker.
- 2. Scatter garlic and onion over the chicken. Add carrots and bell peppers.
- 3. In a bowl, mix honey or maple syrup, soy sauce, lemon juice, paprika, and cumin until well combined. Pour over the chicken and vegetables.
- 4. Cover and cook on low for 6-8 hours or high for 3-4 hours until the internal temperature reaches 165°F.
- 5. Shred the chicken in the pot using two forks and stir to combine before serving.
