  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 ripe avocados
  • 1 cup diced bell peppers (red and yellow)
  • 1 cup diced sweet onion
  • 4 large flour tortillas
  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • Juice of 1 lime
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Season the chicken breasts with salt, pepper, cumin, and paprika. Heat olive oil in a skillet over medium heat.
  2. Cook the chicken for 5-7 minutes on each side until golden brown and cooked through. Remove from skillet and let rest.
  3. In the same skillet, sauté diced onions and bell peppers for about 4-5 minutes until softened.
  4. Mash the ripe avocados in a bowl with lime juice and salt until creamy.
  5. Slice the cooked chicken and layer it on each tortilla with sautéed veggies and mashed avocado.
  6. Roll tightly, tucking in sides as you go. Sear burritos seam-side down on a hot skillet for about 2-3 minutes per side until golden brown.
