  • 1 lb ground beef (80/20)
  • 1 cup plain or Italian breadcrumbs
  • 2 large eggs
  • 1/4 cup balsamic vinegar
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup ketchup
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a skillet over medium heat, sauté onions in olive oil until translucent. Add minced garlic and cook for an additional minute.
  3. In a large bowl, combine ground beef, sautéed onions and garlic, breadcrumbs, eggs, ketchup, parsley, salt, and pepper. Mix gently.
  4. Reserve a tablespoon of balsamic vinegar for glazing. Incorporate the rest into the meat mixture.
  5. Shape the mixture into a loaf in the prepared pan. Bake for about 60 minutes or until internal temperature reaches 160°F (70°C).
  6. Brush reserved balsamic glaze on top during the last 10-15 minutes of baking for a sticky finish.
  7. Let cool slightly before slicing; serve warm.
