Ingredients

  • 2 cups fresh cherries, pitted and halved
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1 cup light brown sugar
  • ½ cup unsalted butter, melted
  • 1 tsp vanilla extract
  • ¼ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a medium bowl, combine cherries, half of the brown sugar, and 1 tablespoon of flour; let macerate.
  3. In another bowl, whisk together flour, oats, remaining brown sugar, and salt. Add melted butter and mix until crumbly. Reserve one cup for topping.
  4. Press the remaining mixture into the bottom of the baking dish to form the crust. Spread the cherry filling over it.
  5. Sprinkle reserved crumb mixture on top and bake for 30-35 minutes until golden brown and bubbly.
  6. Allow cooling completely before slicing into squares.
