Description

  • 3/4 cup granulated sugar
  • 1/2 cup unsweetened shredded coconut
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 large egg
  • 2 tbsp fresh lime juice
  • 1 tbsp lime zest
  • 1 tsp vanilla extract
  • 1/4 cup powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together flour, granulated sugar, shredded coconut, baking powder, and salt.
  3. In another bowl, beat the egg, lime juice, lime zest, vanilla extract, and melted butter until smooth. Combine with the dry ingredients until just mixed.
  4. Scoop tablespoon-sized portions of dough and roll in powdered sugar before placing on baking sheets about two inches apart.
  5. Bake for 10-12 minutes until edges are golden but centers remain soft. Cool on baking sheets for five minutes before transferring to wire racks.
