Instructions

- In a large bowl, whisk together flour, granulated sugar, shredded coconut, baking powder, and salt.
- In another bowl, beat the egg, lime juice, lime zest, vanilla extract, and melted butter until smooth. Combine with the dry ingredients until just mixed.
- Scoop tablespoon-sized portions of dough and roll in powdered sugar before placing on baking sheets about two inches apart.
- Bake for 10-12 minutes until edges are golden but centers remain soft. Cool on baking sheets for five minutes before transferring to wire racks.
