  • 1 lb salmon fillets
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 2 large eggs, beaten
  • ½ cup mayonnaise
  • 2 tbsp sriracha (adjust based on heat preference)
  • 1 tbsp honey
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Cut the salmon into bite-sized pieces.
  3. Set up a breading station with flour seasoned with salt and pepper, beaten eggs, and panko breadcrumbs.
  4. Dip each salmon piece in flour, then egg, and finally coat with panko breadcrumbs.
  5. Place the coated bites on the prepared baking sheet and bake for 12-15 minutes or until golden brown.
  6. For the Bang Bang sauce, whisk together mayonnaise, sriracha, and honey in a bowl.
