  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 2 medium carrots, thinly sliced
  • 2 cups Napa cabbage, chopped
  • 4 green onions, chopped
  • 1 cup mushrooms (shiitake or button), sliced
  • 2 large eggs, beaten
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • Tortillas or pancakes for serving

Instructions

  1. Prep all ingredients by chopping them into uniform pieces.
  2. Heat a wok or large skillet over medium-high heat with a drizzle of oil. Add chicken and cook until golden brown and cooked through (5-7 minutes).
  3. Push the chicken aside and add beaten eggs; scramble until just set.
  4. Add garlic, carrots, cabbage, mushrooms, and green onions to the pan. Sauté for about 3-5 minutes until veggies are slightly tender but still crunchy.
  5. In a small bowl, whisk together soy sauce, rice vinegar, and sesame oil. Pour over the chicken and vegetables; simmer for another minute.
  6. Serve in warm tortillas or pancakes, rolling them up like burritos.
