  • 1 cup panko breadcrumbs
  • 1 cup marinara sauce
  • 8 oz fresh mozzarella cheese, sliced
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • Fresh basil leaves for garnish
  • Salt for seasoning

Instructions

  1. Slice the eggplant into ½-inch thick rounds and sprinkle with salt. Let sit for 30 minutes to draw out moisture.
  2. Rinse and pat the eggplant dry with paper towels. Dip each slice in beaten eggs, then coat with a mixture of panko breadcrumbs and Italian seasoning.
  3. Preheat your air fryer to 375°F (190°C). Arrange the coated eggplant slices in a single layer in the basket.
  4. Air fry for 12-15 minutes, flipping halfway through until golden brown and crispy.
  5. In a baking dish, layer marinara sauce, half of the crispy eggplant, mozzarella, and Parmesan cheese. Repeat layers and top with remaining sauce.
  6. Bake at 375°F (190°C) for about 20 minutes until cheese is melted and bubbling.
