  • 4 boneless, skinless chicken breasts
  • 1/2 cup balsamic vinegar
  • 4 cloves fresh garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 bell peppers, sliced (any color)
  • 1 medium zucchini, sliced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh herbs (basil or thyme), chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper on both sides.
  3. In a bowl, whisk together balsamic vinegar, minced garlic, and olive oil.
  4. Heat a large oven-safe skillet over medium heat with a splash of olive oil. Sear each chicken breast for about 5 minutes on each side until golden brown.
  5. Add cherry tomatoes, bell peppers, and zucchini around the chicken in the skillet. Drizzle half of the marinade over everything.
  6. Transfer the skillet to the preheated oven and bake for 20–25 minutes until chicken reaches an internal temperature of 165°F (75°C).
  7. Remove from the oven, drizzle with remaining marinade, sprinkle fresh herbs on top, and serve warm.
