- 1 cup light brown sugar
- 1/2 cup unsalted butter (1 stick)
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp pure vanilla extract
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan with butter.
- In a small saucepan, melt butter with brown sugar over medium heat until bubbling. Pour into the bottom of the prepared pan.
- Arrange pineapple rings over the brown sugar mixture; optionally add cherries in the center of each ring.
- In a mixing bowl, cream together granulated sugar and softened butter until light and fluffy. Add eggs one at a time, mixing well after each addition.
- In another bowl, combine flour, baking powder, and salt. Gradually mix into the wet ingredients until just combined.
- Pour batter over the pineapples in the pan and spread evenly.
- Bake for 40–45 minutes or until golden brown and a toothpick inserted into the center comes out clean.
- Allow to cool slightly before inverting onto a serving plate.
