  • 1 cup light brown sugar
  • 1/2 cup unsalted butter (1 stick)
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan with butter.
  2. In a small saucepan, melt butter with brown sugar over medium heat until bubbling. Pour into the bottom of the prepared pan.
  3. Arrange pineapple rings over the brown sugar mixture; optionally add cherries in the center of each ring.
  4. In a mixing bowl, cream together granulated sugar and softened butter until light and fluffy. Add eggs one at a time, mixing well after each addition.
  5. In another bowl, combine flour, baking powder, and salt. Gradually mix into the wet ingredients until just combined.
  6. Pour batter over the pineapples in the pan and spread evenly.
  7. Bake for 40–45 minutes or until golden brown and a toothpick inserted into the center comes out clean.
  8. Allow to cool slightly before inverting onto a serving plate.
