  • 8 oz elbow macaroni
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 1 tsp smoked paprika
  • 2 cups whole milk
  • 4 tbsp unsalted butter
  • ¼ cup all-purpose flour
  • ½ cup panko breadcrumbs (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or smoker to 225°F (107°C).
  2. Boil salted water in a large pot and cook the macaroni until al dente. Drain and set aside.
  3. In a saucepan over medium heat, melt butter. Whisk in flour until golden brown, then gradually add milk while stirring until thickened.
  4. Remove from heat and stir in cheddar and Monterey Jack until melted. Mix in smoked paprika, salt, and pepper.
  5. Combine the pasta with the cheese sauce until well-coated.
