  • 1 cup sushi rice
  • 1 lb fresh shrimp, deveined
  • 1 ripe avocado, sliced
  • 1 English cucumber, thinly sliced
  • 2 tbsp rice vinegar
  • 2 tbsp sriracha sauce (adjust to taste)
  • 2 tbsp toasted sesame seeds
  • 3 sheets seaweed (nori), cut into strips
  • 2 green onions, finely chopped
  • Salt and pepper to taste

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear. Cook it in a pot with equal parts water (1:1) for about 20 minutes until fluffy.
  2. While the rice cooks, sauté the shrimp in a skillet over medium heat for 3-4 minutes per side until pink and opaque. Season lightly with salt.
  3. In a small bowl, mix the cooked rice with rice vinegar and a pinch of salt.
  4. Begin stacking by placing a spoonful of seasoned rice on a plate, followed by layers of cucumber, shrimp, avocado slices, and drizzle with sriracha sauce.
  5. Finish with sesame seeds and chopped green onions to create your masterpiece.
