Description

Stuffed Salmon with Spinach & Feta is a culinary delight that harmoniously combines tender salmon, creamy feta, and vibrant spinach. This dish offers a flavor explosion that transforms any meal into a memorable occasion. Perfect for dinner parties or family gatherings, it’s not just food—it’s an experience that fosters connection and joy around the table.

Ingredients

Scale
  • 4 salmon fillets (6 oz each)
  • 2 cups fresh baby spinach
  • 1 cup crumbled feta cheese
  • 3 cloves garlic, minced
  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a pan, heat olive oil over medium heat and sauté minced garlic until fragrant. Add spinach and cook until wilted (about 2–3 minutes).
  3. Remove from heat and mix in feta cheese and lemon juice; let cool slightly.
  4. Slice each salmon fillet horizontally to create pockets without cutting through entirely.
  5. Stuff each pocket generously with the spinach-feta mixture; secure with toothpicks if needed.
  6. Place stuffed salmon in the baking dish, drizzle with olive oil, season with salt and pepper, and bake for 20–25 minutes until flaky.
