  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 1 bell pepper, chopped (any color)
  • 1 can (15 oz) sweet corn, drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14.5 oz) diced tomatoes (fire-roasted preferred)
  • 1 cup shredded cheddar cheese
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Tortilla chips for topping

Instructions

  1. Brown ground beef in a skillet over medium heat until fully cooked; drain excess fat.
  2. Sauté onion and bell pepper in the same skillet until onion is translucent.
  3. In a slow cooker, combine browned beef, sautéed veggies, corn, beans, diced tomatoes, spices, salt, and pepper.
  4. Stir well to ensure even distribution of flavors.
  5. Cook on low for 6-8 hours or high for 3-4 hours.
  6. About 30 minutes before serving, sprinkle shredded cheddar cheese on top and cover until melted.
