  • 4 large bell peppers (red or yellow)
  • 3 cups cooked, shredded boneless skinless chicken breasts
  • 1 cup buffalo sauce
  • 8 oz cream cheese (softened)
  • 1 cup shredded cheddar cheese
  • 2 green onions (finely chopped)
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Slice the tops off the bell peppers and remove seeds.
  2. Cook chicken in a skillet over medium heat until no longer pink (about 6-7 minutes per side). Shred the chicken once cooled.
  3. In a bowl, mix shredded chicken with buffalo sauce, cream cheese, garlic powder, salt, and pepper until well combined.
  4. Stuff each bell pepper with the mixture and place upright in a baking dish.
  5. Top each pepper with shredded cheddar cheese.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly.
