Ingredients

  • 1 lb shrimp (deveined)
  • 2 ripe avocados
  • 1 ripe mango
  • 2 tbsp fresh lime juice
  • 1 tsp chili powder
  • ¼ cup fresh cilantro (chopped)
  • ½ red onion (chopped)
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Marinate shrimp in lime juice, chili powder, salt, and pepper for 10 minutes.
  2. Heat olive oil in a skillet over medium-high heat. Sauté shrimp for 3-4 minutes until pink and opaque.
  3. In a separate bowl, mix diced mango, chopped red onion, cilantro, lime juice, salt, and pepper to make mango salsa.
  4. Assemble bowls by layering sliced avocado at the bottom, topped with sautéed shrimp and mango salsa.
  5. Drizzle with additional lime juice and garnish with extra cilantro if desired. Serve immediately.
