  • 12 oz large shrimp (fresh or thawed)
  • 8 oz fettuccine or linguine
  • 4 cloves garlic (minced)
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes (halved)
  • 2 tbsp extra virgin olive oil
  • Salt & pepper to taste
  • Juice of 1 lemon

  2. In a skillet over medium heat, add olive oil. Sauté shrimp seasoned with salt and pepper until pink and opaque, about 3-4 minutes per side.
  3. Add minced garlic and sauté until fragrant—about 30 seconds.
  4. Stir in cherry tomatoes and spinach, cooking until spinach wilts.
  5. Pour in heavy cream, then mix in grated Parmesan until melted into a rich sauce.
  6. Toss cooked pasta with shrimp and sauce; add reserved pasta water as needed for desired consistency.
