  • 2 cups shredded sharp cheddar cheese (divided)
  • 1 can (10.5 oz) low-sodium cream of mushroom soup
  • 1 cup panko breadcrumbs
  • 2 tablespoons olive oil (divided)
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Blanch the chopped asparagus in boiling water for 3 minutes, then drain.
  3. In a large bowl, mix the cream of mushroom soup with half of the cheddar cheese and garlic powder until well combined.
  4. Fold in the blanched asparagus and half of the remaining cheddar cheese until evenly coated.
